How so?

I have an iPhone. Never had any Mp3 player before, or any kind of PDA. I don't know how I lived without it. I put all my CD's on the computer (that took a week) and then onto the phones. Almost 4000 tracks.

I haven't been restricted at all.
I bought 3 albums through iTunes, got the album art and burned those CDs as well.
NEVER even had to open the instruction book for either the phones or the iTunes application.

You do own the files and you can do what ever you want with them. I've run iTunes on both windoze machines and Macs.
