Plaster&Lathe
I've always noticed around here in older homes, (mixed in the plaster), is horse hair. I see it in Richmond done in the fan district alot,,,,,but I'm curious,,,,was that a common practice everywhere or just in the south?

Everywhere. P&L is what was typically used before drywall.

Not all plaster had horse hair in it, but it makes the plaster stronger, like rebar or wire mesh in concrete. I have seen it both with and without hair.

Horse hair plaster dates plaster to a certain vintage. In my experience, it's usually the poorer districts that had horse-hair plaster over plaster with some portland in it. The horse-hair plaster was typically only lime plaster. A real treat to work with, particularly if the home ever went unheated for a winter or two.

Oh man I had the pleasure of working in a home like that. Went to cut in a 2 gang box and half the wall broke off. I had to sheet rock it and mud it myself. And the whole time Im working in this house I keep telling myself "man there is something really weird about this plaster" "it almost seems sandy"

Yes, that "sandy" plaster is the stuff I dread. It's just like you say... cut in a box and half the wall falls out. It's nearly always a home in a poor area, and it's nearly always a home that went without heat for one or several winters.
