I've done this hundreds of times with metal boxes and mud rings but not plastic. It really won't matter what it looks like as it will be behind a stove.
Cheapest way is to just put 2 duplex receptacles in it and call it a day. Switch or decora blank in one of the gangs like posted above and an appropriate plate. You can get 2 of those ugly gangable plates, 2 duplex, 1 blank or they actually make duplex by blank plates.
I think you are over engineering it. I would have already slapped the 2nd duplex in and had the check cashed by now.
Now that I think of it I guess he'd never ask if the walls weren't finished. But if the walls are finished, it's just a cover plate question? Not much you can do there... I am sure @A Little Short already thought of using a blank.
Leviton makes double gang plates for a single centered decora device like the ones @CoolWill linked, but I am not sure if either will work with a double gang box.
Well, I actually had the answer in my parts drawer in the van. I had a 2G duplex/blank in there and can't tell you why!!!
I guess I was used to coming up with different configurations with switches and just had a "brain fart" on the receptacle.
I was waaaaaay over thinking!:vs_blush:
But I got-er-dun!
