contactor required for hood install...

Got a 911 call for the hood I wired in the deli dept. of a mompop grocery store. The FM wanted it wired so the electric range can only be turned on if the exhaust fan is on. Sucks because I used a shunt breaker. Now as well I had wire a contactor in too, could have accomplished ansul and new request using a contactor only. Oh well, it put an extra $400 in my pocket for a couple hours yesterday.

So you only wired it to the trip contact?
Yeah, that's what we've always done, shut down only when ansul is activated. This is a first for me, never came across a commercial electric range and hood set up. FM said it doesn't create enough heat to trigger automatic sensor in hood so wiring this way will ensure the use of fan while range is used. The owner believes they were out to get him.

Yeah, most here are gas ranges and deep fryers or electric deep fryers. I bet they don't interlock the fan to the gas valve, only the trip contact. Kind of a double standard.
In Massachusetts the plumbing code requires us to shut gas down when the ansul trips, and when the exhaust fans are off.
The electrical appliances under hood are supposed to shut down on ansul activation.

I've never seen the gas tied to the fan. How do standing pilots work when the fan is off.
