As an inside wireman apprentice, will I be learned on how to work with coax and cat5 and such? Or is that out of a inside wiremans "jurisdiction"?

I ask because "cabling/IT" are always set apart from "Electrician" I see.

It all depends on the contractor you work for. My last employer did power and data. I was an electrician but if there were less than 50 drops in an office I would do it along with the electrical. Otherwise they brought in the "data crew" to do it. We got slow one time and I ran a data job. It was an entire floor with 380 drops. 80,000 feet of cat5e. I was a little out of my element but they sent a good data crew to work for me and they taught me a lot.

So both sort of run along side eachother then? Data and power. I'd imagine I'll see mostly power in my career?
