I've installed heat trace on interior pipes in the past bit not the roof style, my question is can you extend a the length by connecting two together as long as you don't exceed the amperage rating of the Supply wiring or do you void the UL listing by doing this?

Yes you can splice self reg cable. Refer to the manufacturer's design guide regarding maximum run length, circuit breaker sizing, etc.

If it is a factory made cable set, I would say no, but I could be talking out of my butt.

What I looked at was the factory made cable sets and the end of the length was factory sealed. I could cut and splice on an additional length but think I might just be asking for problems

I install Danfoss Rx, factory ends, I have never tried to splice but obviously Danfoss states that you can't.
I use their layout to calc length and it works out the right length each time.
Personally, I won't extend, could be opening up a can of worms that you may eventually lose on
