My recipe is kind of cheating. I just used the Cabelas kit that has the seasoning and cure packages. They are good for 15 pounds and super easy to use. Biggest thing I've learned is to use ice water. I put a container in the freezer a half an hour or better before I start to mix. If it's not cold enough, I add ice cubes. No ice in the mixture, just cold water.Any recipes you would like to share. What temp were you smoking at?
As for the temperature, I set the smoker to "Smoke" and "P3". This keeps it at about 175-190°F. I use the middle burner on the right set as low as possible and monitor it to keep the temp in the same range.
