I haven't yet come across this issue, but I would use Nutek boxes with a 2x4 on one side.

Are you in AB? Because I thought we couldn't use poly hats anymore? Has to be plastic gasketed boxes (Building Code)?

If you go AC90 then you pretty much have to use a steel box with poly hats. Maybe a 2304 to fill out the hat more.

Or 4x4s with poly hats and plaster rings supported from behind.

What you are talking about is what we generally refer to as “far-side support”.

To achieve this we would generally use the Caddy H23 bracket to hold the box. It also allows you to attach the box to either side of the stud.

I wonder if those are CUL rated? I've never seen them before. Typically I use KSS boxes.

Those caddy supports still don't help with the vapour barrier issue though.

Yes, with a mud ring. Can’t you cut the vapor barrier tightly around the mud ring?

Vapour barrier has to enclose the box.

I have only ever used plastic vapour barrier. Cut in 2 x 2 sections and wrap the box in it.

I've done that on occasion when I didn't have the right poly hat, but overall poly hats are way easier.

I'm not a fan of the plastic boxes on the exterior walls that we have here.

They're more of a pain to work with, and are not as adaptable. No spacing them out or in to accommodate finished wall thickness.
